I have since then wanted to make cannoli's and actually tried once before tonight. I made the dough and realized that I did not have any small tubes on which to wrap the cannoli and fry them. I fried them anyway and used the fried pieces like chips to scoop up the yummy guts. Good but definitely not the same. I recommend reading recipes through before you try them. :)
So I found a recipe in "Cooking Light" magazine that shows you how to make the shells without frying and them and without little metal tubes. You create tubes out of heavy duty aluminum foil. You use refrigerated phyllo dough and wrap it around the tubes you created and bake it. It was easy though the dough was delicate. A little time consuming but so yummy.
